Blue Spring Oolong Tea, also known as ‘Compassionate Oolong Tea’, is a very fine and rare Ti Kuan Yin special grade Tea. It comes from the renowned Tea-growing province of Fujian in China. Producers add blue mallow flowers to this Tea to represent the freshwater spring created by Guan Yin, the Iron Goddess.
According to a Mahayana Buddhist tale, Guan Yin disguised herself as a Goat herder and one day passed through a drought-stricken village. The villagers, despite their struggles, offered the goat herder what little water they had left. Their compassion (hence the name of this Oolong Tea) led Guan Yin to reveal her true identity. The Iron Goddess then created a beautiful blue spring as a gift to the Fujian villagers.

What is Oolong Tea?
Oolong Tea, in many ways, sits in-between Green Tea and Black Tea in terms of processing. It’s slightly fermented and semi-oxidised, making it the perfect middle-ground. Like all ‘real’ Teas, it comes from the Camellia sinensis plant.
Many know Oolong Tea as “Chinese Restaurant Tea”. This is because of its popularity in restaurants across China, mostly for its ability to improve digestion. Oolong Teas also originate from China; in particular, the Fujian province. However, many other countries also produce it today, including Taiwan, Vietnam, Sri Lanka, Thailand and Malawi. Furthermore, some regions in India make Oolong Tea such as Darjeeling and Assam.
Nevertheless, the most famous Oolong Teas still come from Fujian. The region has a subtropical climate with mild winters and heavy rainfall. It boasts magnificent mountain ranges and vast forests – conditions perfect for creating many different types of Oolong Tea. This, of course, includes Blue Spring Oolong Tea.
About Blue Spring Oolong Tea

Ingredients: Chinese Oolong and Mallow Flowers.
Origin: The Fujian province, China.
Brewing Instructions: Brew using freshly boiled water left to cool to temperatures between 75 and 80 C. Infuse for 1 to 2 minutes.
How to Serve: Best served as it is.
Tasting Notes: This brew has a deep, sweet aroma. Its exceptional flavour, meanwhile, has notes reminiscent of orchid.
Colour in Cup: Yellow-green liquor, light in tone.
